Ghee Cake

Image
Ghee cake is a popular cake available in Cochin Bakeries in Kerela. As the name indicates, its made with ghee instead of butter. The cake is very flavorful with ghee and extremely soft with a very nice texture. Originally its a pound cake can be made in a loaf pan but I made it in 2 small bundt pans and one ramekin. The recipe is given makes a 8 inch loaf. I bookmarked the recipe from  Uma's blog  long time but never got a chance to attempt as we always prefer eggless bakes. After so long time I tried a bake with egg and the cake came out so soft and my kiddo enjoyed it to the core.Lets move on to the recipe........................................................                                                                                   ...

Orange Flavored Tutti Frutti Cupcakes/Eggless Orange flavored Tutti Frutti Cupcake

Image
We are entering the final week of the mega marathon themed baking and for this week I planned to share cup cakes and muffins. My kids love cup cakes a lot with or without frosting,so I make it often but never get a chance to click and post in blog. As already I promised in my  tutti frutti cake ,today I am sharing orange flavored tutti frutti cake in the cupcake version. This recipe I tired so far 3 times and came out so good every time. The addition of fresh orange juice gives a very nice flavor and texture to the cake. When I made the cup cake, the batter became more in each cup and rose well. The taste and texture was like the previous attempt.Try this simple, yummy cup cake and enjoy.Off to the recipe.......................                                                                    ...

I topped mine with some whipped cream as I was making ice cream on that day. The cake tasted so delicious and moist. Also I made one in the mug and other in the ramekin bowl for a perfect size.I scaled down the measurement for the ramekin bowl size. Here I used a slightly bigger mug to and the cake was inside, bit difficult to take the pictures. For this measurement 12 ounce mug is perfect, lets move on to the recipe..............................               ...

Eggless Butterless Dates Cake /Dates Cake

Image
Today is day 4 and its the final day post for this week and the recipe is Dates cake under the eggless cake series.I wanted to try this cake ever since I bookmarked from Divya's  space. In the original recipe the cake looks dark brown color like a fruit cake. But mine was came out light so pale. Its may be due to the color of the dates and  also I cooked the dates with milk instead of water. That's the reason couldn't achieve a dark brown color like the original one.The cake came out so spongy with a perfect texture and the addition of cardamom powder makes it more flavorful. This cake can be eaten as such but it tastes awesome when its served along with a scoop of vanilla ice cream.Off to the recipe..............................................                                                              ...

Coming to the recipe,in my eggless cakes series for the Blogging Marathon #51,sharing another yet simple and colorful cake with tutti frutti. This cake was in my to do list since the time I bookmarked it from  Chitra's blog. This is super soft and spongy cake with the crunch of tutti frutti. If you want you can add some chopped nuts and raisins, but here I used only tutti frutti. This recipe uses yogurt and it should be fresh and room temperature. As I was not sure about how sour the yogurt was so used 3/4 cup and 1/3 cup of milk. The cake came out super soft and everybody liked it.As the weather was very bad on the day I made, the clicks are not good as I expected, will update it.A...
