Chicken curry
My husband and son both likes to have chicken.The following recipe is my own way of making chicken curry and easy to make, tastes good.In this recipe I used Kulambhu powder which enhances the flavor and taste and I used the chicken legs.The amount of spice powder given for this curry is for a bit spicier version,since we like the chicken curry to be spicy.

Ginger&garlic paste | 2tbs |
Coconut(grated) | 3 tbs |
Kulambhu powder | 2tsp |
Chilly powder | 1/2tsp |
Coriander powder | 1tsp |
Garam masala powder | 1/2tsp |
Turmeric powder | 1tsp |
Pepper corns | 1tsp |
Fennel seeds(sombhu) | 1tsp |
Cloves | 4nos. |
Cinnamon stick | 1 inch piece |
Star anise | 1no. |
Curry leaves | 2 sprigs |
Coriander leaves | |
Oil | 4tbs |
Salt | to taste |
Method
Clean and cut the chicken into medium size pieces.Marinate the chicken with 1tsp of ginger&garlic paste,all the dry powders and salt for 30 mins.Meanwhile fry the sombu and pepper in a little oil and grind it with coconut to a fine paste.Heat oil in a pan,season it with whole garam masala and curry leaves and saute the onions till it becomes transparent.Now add in the ginger & garlic paste and tomato till it becomes mushy.
Then add in the marinated chicken and saute it till the chicken color gets changed ,add a cup of water and cook it covered until the chicken becomes tender.Now add the ground coconut paste and let it boil till it reaches the desired consistency.
Turn of the stove and garnish it with coriander leaves.
Enjoy it with rice or roti.
- This curry can be made without coconut.
- Kulambhu powder can be replaced by chilly powder and coriander powder.
